Ingredients  

  • 200 g dark chocolate (55-70%), chopped
  • 1 1/2 cups heavy cream, divided
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch salt
  • chocolate shavings or cocoa powder, for garnish

Method 

  1. Melt the dark chocolate with 1/2 cup of the cream in a heatproof bowl over simmering water (or in 30-second microwave bursts), stirring until smooth. Let cool for 5 minutes.
  2. In a separate chilled bowl, whip the remaining 1 cup cream with powdered sugar, vanilla, and salt until soft peaks form.
  3. Gently fold one-third of the whipped cream into the cooled chocolate to loosen it.
  4. Fold in the rest of the whipped cream in two additions, being careful not to deflate the mixture.
  5. Spoon into 4 glasses or ramekins and chill for at least 2 hours.
  6. Top with chocolate shavings or a dusting of cocoa before serving.
