Masala cheese toast is the snack that shows up at every Indian tea time for good reason. It is a grilled cheese sandwich, but the cheese is mixed with finely chopped onion, tomato, green chilli, and a shower of chaat masala, so every bite comes with a little crunch and a lot of tang. Golden, blistered, and impossibly cheesy.
This version is made in a pan, no oven required, and comes together in about ten minutes. Use a good melting cheese like cheddar or mozzarella, spread the spiced mix generously, and press the toast down as it cooks so the outside turns crisp and the inside stays gooey. Cut it into fingers, dip it in ketchup, and enjoy it while it is hot.
